2 ripe avocados, halved and pitted

1 large cucumber, peeled and diced

1 cup low-sodium vegetable broth (chilled)

1 cup plain Greek yogurt or dairy-free yogurt

2 tablespoons fresh lime juice

1 clove garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh mint leaves for garnish

Optional: crushed red pepper flakes for a spicy kick

Blend the Base: In a blender, combine the avocados, diced cucumber, chilled vegetable broth, Greek yogurt, lime juice, and minced garlic. Blend until smooth and creamy.

    Ballpark Flavor: Add olive oil, and season with salt and pepper to taste. Blend for a few more seconds to mix all flavors well.

      Chill it Out: Transfer the soup into an airtight container and refrigerate for at least 1 hour, allowing the flavors to meld and the soup to chill.

        Serve & Garnish: Once chilled, give the soup a good stir before serving. Ladle into bowls and garnish with fresh mint leaves and a sprinkle of crushed red pepper flakes if you desire some heat.
