Chili Turkey Wraps

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 medium onion, diced

2 cloves garlic, minced

1 medium red bell pepper, diced

1 packet (1 oz) chili seasoning mix

1/2 cup diced tomatoes (canned or fresh)

1/4 cup fresh cilantro, chopped

1 tbsp olive oil

Salt and pepper, to taste

4 large whole wheat tortillas

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

Salsa and sour cream, for serving

Instructions
 

Cook Turkey: In a large skillet, heat olive oil over medium heat. Add diced onions and garlic, sauté for 2-3 minutes until softened. Add the ground turkey, breaking it apart with a spatula, and cook until browned (about 5-7 minutes).

    Add Veggies: Stir in the red bell pepper and continue to sauté for another 3-4 minutes until the pepper softens.

      Mix Ingredients: Add the black beans, corn, diced tomatoes, chili seasoning mix, salt, and pepper. Stir everything together and let it cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat and fold in the chopped cilantro.

        Assemble Wraps: Take a tortilla and spread a layer of shredded lettuce in the center. Spoon a generous amount of the turkey-chili mixture on top of the lettuce, then add a sprinkle of shredded cheese.

          Roll the Wrap: Carefully fold the sides of the tortilla inwards and then roll it up tightly from the bottom to encase the filling. Repeat with the remaining tortillas and filling.

            Serve: Slice the wraps in half and serve with salsa and sour cream on the side for dipping.
