1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon smoked paprika

½ teaspoon sea salt

½ teaspoon black pepper

Juice of 1 lime

Zest of 1 lime

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chickpeas: After draining and rinsing the chickpeas, pat them dry with a clean kitchen towel or paper towels. Remove any loose skins for an extra crunchy texture.

      Toss with Oil and Spices: In a mixing bowl, combine the dried chickpeas, olive oil, chili powder, cumin, garlic powder, smoked paprika, sea salt, black pepper, lime juice, and lime zest. Toss everything until the chickpeas are evenly coated with the spice mixture.

        Spread on a Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned chickpeas in a single layer on the baking sheet.

          Roast the Chickpeas: Place the baking sheet in the preheated oven and roast for about 25-30 minutes or until the chickpeas are golden brown and crunchy. Stir them halfway through to ensure even roasting.

            Cool and Serve: Remove the chickpeas from the oven and allow them to cool slightly. They will continue to crisp as they cool. Garnish with chopped fresh cilantro if desired.
