Ingredients

4 ears of fresh corn, husked

1/4 cup unsalted butter, softened

2 tablespoons lime juice (about 1 lime)

1 tablespoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup crumbled Cotija cheese (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Corn: Husk the corn, removing all the silk, and break the stalks if necessary to fit your grill space. Soak the corn in cold water for about 30 minutes. This will help to prevent it from burning on the grill.

Make the Chili Lime Butter: In a mixing bowl, combine the softened butter, lime juice, chili powder, smoked paprika, garlic powder, sea salt, and black pepper. Mix well until all ingredients are evenly combined.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

Grill the Corn: Remove the corn from the water and shake off any excess moisture. Brush the chili lime butter generously over each ear of corn, ensuring all sides are covered.

Place on the Grill: Grill the corn directly over the heat for about 10-15 minutes, turning every few minutes until all sides are nicely charred and cooked through. Brush with more chili lime butter as you flip the corn for extra flavor.

Serve: Once cooked, remove the corn from the grill and let it cool slightly. For added flavor, sprinkle crumbled Cotija cheese over the corn, followed by a handful of fresh cilantro. Serve with lime wedges on the side for an extra zing.
