2 dozen fresh clams (such as Manila or littleneck)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1-2 fresh red chilies, thinly sliced (adjust to your spice preference)

½ cup white wine (such as Sauvignon Blanc)

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon fresh lime juice

2 green onions, finely chopped (for garnish)

Fresh cilantro, chopped (for garnish)

Crusty baguette (for serving)

Instructions
 

Clean the Clams: Place the clams in a large bowl of cold water and let them soak for about 20 minutes to allow them to expel any sand. Rinse them well under cold water afterward.

    Prepare the Sauce: In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and ginger, stirring until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

      Add Heat: Stir in the sliced red chilies and cook for another 1-2 minutes until they soften slightly and release their flavors into the butter.

        Deglaze: Pour in the white wine, soy sauce, and fish sauce. Bring the mixture to a simmer and cook for about 3-4 minutes to reduce the sauce slightly.

          Cook the Clams: Add the cleaned clams to the skillet. Cover with a lid and allow the clams to steam for about 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

            Finish with Lime: Once the clams are cooked, drizzle the fresh lime juice over them, toss gently to combine, and taste for seasoning, adjusting with extra soy sauce or lime juice if necessary.

              Serve: Transfer the clams to a serving bowl, spoon the delicious chili garlic butter sauce over them, and garnish with chopped green onions and cilantro. Serve warm with crusty baguette on the side for dipping into the sauce.
