2 large chicken breasts, thinly sliced

2 medium zucchinis, sliced into half-moons

1 bell pepper (red or yellow), sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water

3 tablespoons vegetable oil (divided)

Salt and pepper to taste

Sesame seeds for garnish

Chopped green onions for garnish

Prep the Chicken: Season the sliced chicken breasts with salt and pepper. Let them marinate in half of the soy sauce for about 15 minutes for enhanced flavor.

    Cook the Chicken: In a large wok or non-stick skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until the chicken is cooked through and lightly browned. Remove from the pan and set aside.

      Stir-Fry Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant. Then, add the sliced bell pepper and zucchini. Stir-fry for about 3-5 minutes until the veggies are tender but still crisp.

        Combine Ingredients: Return the cooked chicken to the pan with the veggies. Add the remaining soy sauce, oyster sauce, and sesame oil. Pour in the cornstarch mixture and stir-well to combine, ensuring everything is evenly coated. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
