Chicken Teriyaki Lettuce Cups

1 lb (450g) boneless, skinless chicken thighs, diced

2 tablespoons vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 inch piece of ginger, grated

1/3 cup soy sauce

2 tablespoons mirin (or sweet rice wine)

1 tablespoon honey or brown sugar

1 tablespoon sesame oil

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon water (optional, for thickening)

1 cup shredded carrots

1 red bell pepper, finely chopped

3 green onions, sliced

1 cup fresh cilantro, chopped (for garnish)

1 head of butter lettuce or romaine, leaves separated

Instructions
 

Prepare the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the diced chicken thighs and cook until they are browned and cooked through, about 5-7 minutes.

    Sauté Aromatics: Add the chopped onion to the pan and sauté for about 2-3 minutes until it becomes translucent. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

      Make the Teriyaki Sauce: In a bowl, whisk together the soy sauce, mirin, honey (or brown sugar), and sesame oil. Pour this mixture over the chicken and bring it to a simmer.

        Thicken the Sauce (Optional): If you'd like a thicker sauce, mix the cornstarch with the water in a small bowl to create a slurry. Add this to the teriyaki sauce and stir until it thickens, about 1-2 minutes.

          Add Veggies: Stir in the shredded carrots and chopped red bell pepper, and let everything cook for another 2-3 minutes until the veggies are slightly softened but still crunchy.
