Chicken Skewers with Lime Salsa

For the Chicken Skewers:

1 lb boneless, skinless chicken thighs (cut into 1-inch cubes)

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried oregano

Skewers (soaked in water for at least 30 minutes, if wooden)

For the Lime Salsa:

1 ripe avocado (diced)

1 cup cherry tomatoes (halved)

1 small red onion (finely chopped)

1 jalapeño pepper (seeded and diced)

Zest and juice of 2 limes

¼ cup fresh cilantro (chopped)

Salt and pepper to taste

Instructions
 

Marinate the Chicken:

    In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, cumin, salt, black pepper, and oregano. Add the chicken cubes and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, but ideally for 2 hours.

      Prepare the Lime Salsa:

        In a medium bowl, mix together the diced avocado, cherry tomatoes, red onion, and jalapeño. Add the lime zest and juice, then gently fold in the cilantro. Season with salt and pepper to taste. Set aside to let the flavors meld.

          Assemble the Skewers:

            Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.

              Grill the Chicken:

                Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature should reach 165°F) and has nice grill marks.

                  Serve:

                    Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot with the lime salsa on the side for dipping or drizzling over the skewers.
