1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup orzo pasta

1 cup Marsala wine

2 cups chicken broth

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup heavy cream

1/4 cup fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Sauté the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Stir in the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and golden, about 5 minutes.

      Deglaze with Marsala: Pour in the Marsala wine and scrape the bottom of the skillet to release any flavorful bits. Allow the wine to simmer for about 3-4 minutes, reducing slightly.

        Add Broth and Seasonings: Pour in the chicken broth and stir in the dried thyme and oregano. Bring the mixture to a gentle boil.

          Cook the Orzo: Once boiling, add the orzo pasta to the skillet. Stir and reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the orzo is al dente, stirring occasionally to prevent sticking.

            Finish the Dish: Once the orzo is cooked, stir in the heavy cream and the cooked chicken. Allow it to heat through for another 2-3 minutes. Taste and adjust seasoning with salt and pepper if needed.
