1/2 cup honey (or maple syrup for a vegan option)

1/2 cup brown sugar (packed)

1 teaspoon vanilla extract

1/2 teaspoon salt

1 cup mini chocolate chips (dark or milk chocolate)

1/2 cup dried fruit (like cranberries, raisins, or apricots)

1/2 cup nuts (chopped almonds, walnuts, or pecans - optional)

Instructions
 

Prepare the Pan: Line an 8x8 inch (or 9x9 inch) square baking pan with parchment paper, leaving some overhang for easy removal later. This will help prevent sticking and make cutting the squares easier.

    Mix the Base: In a large saucepan, combine the creamy peanut butter, honey, and brown sugar. Heat over medium-low heat, stirring constantly until the mixture is smooth and bubbling slightly. This should take about 2-3 minutes.

      Flavor It: Once fully mixed and smooth, remove from heat and stir in the vanilla extract and salt.

        Combine with Oats: Immediately add the rolled oats, chocolate chips, dried fruit, and nuts (if using) to the saucepan, stirring well until everything is evenly coated in the gooey mixture.
