4 boneless, skinless chicken breasts

1 cup fresh or frozen cherries (pitted)

1/2 cup chicken broth

1/4 cup honey

2 tablespoons balsamic vinegar

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

Salt and pepper to taste

Fresh thyme or parsley for garnish (optional)

Prepare the Cherry Glaze: In a medium saucepan over medium heat, combine the cherries, chicken broth, honey, balsamic vinegar, soy sauce, garlic, and ginger. Stir well.
