4 medium zucchinis, thinly sliced

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups shredded cheddar cheese (divided)

1 cup mozzarella cheese, shredded

1 cup heavy cream

2 large eggs

1 cup breadcrumbs (preferably Panko for extra crunch)

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Olive oil for drizzling

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onions are translucent and fragrant, about 3-5 minutes.

      Prepare Zucchini: Add the sliced zucchini to the skillet and cook for an additional 5-7 minutes until they begin to soften. Season with salt, pepper, and dried herbs. Remove from heat and let cool slightly.

        Mix the Cheese Filling: In a large mixing bowl, combine 1 cup of cheddar cheese, all of the mozzarella cheese, heavy cream, and eggs. Whisk until well combined. Season with salt and pepper to taste.

          Combine Ingredients: Gently fold the sautéed zucchini mixture into the cheese filling until they are well incorporated.

            Prepare the Casserole Dish: Lightly grease a 9x13 inch casserole dish. Pour the zucchini and cheese mixture into the dish, spreading it evenly.

              Top with Breadcrumbs: In a small bowl, combine the remaining 1 cup of cheddar cheese with the breadcrumbs. Evenly sprinkle this mixture over the top of the casserole.
