4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup bell peppers (mixed colors), thinly sliced

1 cup zucchini, thinly sliced

1 cup spinach leaves, roughly chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon cumin powder

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

1 avocado, sliced (for serving)

Fresh salsa or pico de gallo (for serving)

Sour cream or Greek yogurt (for serving)

Instructions
 

Prep the Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic, cumin, and smoked paprika, cooking for another minute until fragrant.

    Add the Veggies: Toss in the bell peppers, zucchini, and spinach. Sauté until the vegetables are tender and the spinach has wilted, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

      Assemble Quesadillas: Lay one tortilla flat on a clean surface. On one half of the tortilla, sprinkle a mix of mozzarella and cheddar cheese, then add a generous portion of the sautéed vegetable mixture on top of the cheese. Sprinkle a little more cheese on top before folding the tortilla in half.

        Cook Quesadillas: In the same skillet, add a little more olive oil over medium heat. Carefully place the folded quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy, then flip and cook the other side for another 3-4 minutes. Repeat with remaining tortillas.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them rest for a minute. Cut each quesadilla into wedges. Serve warm with sliced avocado, fresh salsa, and sour cream or Greek yogurt on the side.
