Prep the Filling: In a mixing bowl, combine the chopped spinach, mozzarella cheese, ricotta cheese, garlic powder, onion powder, crushed red pepper flakes, salt, and pepper. Mix until well combined.
Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon an even amount of the spinach-cheese filling onto the center of the tortilla, leaving about 1 inch of space around the edges. Fold in the sides and roll tightly to enclose the filling. Repeat with the remaining tortillas.
Preheat the Air Fryer: Set your air fryer to preheat at 375°F (190°C) for about 4.0 minutes.
Brush the Wraps: Lightly spray or brush the outside of each wrap with olive oil or melted butter to help them crisp up during cooking.
Air Fry the Wraps: Place the wraps seam-side down in the air fryer basket in a single layer, making sure not to overcrowd. Air fry for 9.0 minutes, flipping halfway through, or until they are golden brown and crispy.
Add the Finishing Touch: In the last 2.0 minutes of air frying, sprinkle the grated Parmesan cheese over the wraps to allow it to melt and become nicely golden.
Serve: Remove the wraps from the air fryer and let them cool for a minute before slicing. Serve warm with your favorite dipping sauce, like marinara or a creamy ranch dressing.
