8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup canned pumpkin puree

1 teaspoon pumpkin spice (or a mix of cinnamon, nutmeg, and ginger)

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

½ cup breadcrumbs (optional)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes, stirring constantly until it turns slightly golden.
