Ingredients

4 medium sweet potatoes

2 cups pulled pork (cooked and shredded)

1 cup shredded sharp cheddar cheese

1/2 cup cooked corn (fresh, frozen, or canned)

1/4 cup diced jalapeños (fresh or pickled, to taste)

1/2 cup sour cream

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Prick each potato several times with a fork to allow steam to escape. Rub them lightly with olive oil and sprinkle with salt. Place them directly on the oven rack (or on a baking sheet) and roast for 45-60 minutes, or until tender when pierced with a fork.

Prepare the Pulled Pork Mixture: While the sweet potatoes are roasting, in a medium bowl, combine the pulled pork, cooked corn, diced jalapeños, garlic powder, smoked paprika, salt, and pepper. Gently mix until well combined.

Melt the Cheese: In a small saucepan over low heat, melt the shredded cheddar cheese into the pulled pork mixture, stirring continuously until the cheese is fully melted and integrated. Remove from heat.

Stuff the Sweet Potatoes: Once the sweet potatoes are done roasting, carefully cut them in half lengthwise. Fluff the insides slightly with a fork, creating a small well to hold the filling. Spoon the cheesy pulled pork mixture generously into each potato half.

Final Touch: Return the stuffed sweet potatoes to the oven for an additional 10 minutes, allowing the filling to warm through and the tops to slightly crisp.

Serve: Remove from the oven, let cool for a couple of minutes, then drizzle with sour cream and garnish with fresh cilantro. Serve hot and enjoy your cheesy pulled pork stuffed sweet potatoes!
