4 cups fresh or frozen sweet corn (about 4 ears of corn if using fresh)

1 cup diced jalapeños (adjust based on spice preference)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup milk

2 tablespoons butter

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Vegetables: In a large skillet over medium heat, melt the butter. Add the chopped onion and diced jalapeños. Sauté for about 4-5 minutes until the onion is translucent.

    Add Garlic and Spices: Stir in the minced garlic, smoked paprika, cumin, salt, and pepper. Cook for an additional minute until fragrant.
