Cheesy Ground Turkey Enchilada Bake

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 cup black beans, rinsed and drained

1 cup corn, frozen or canned

1 can (10 oz) enchilada sauce

8 small corn tortillas

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray.

    Cook the Turkey: In a large skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes. Drain any excess fat.

      Add Aromatics: Stir in the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

        Season the Mixture: Sprinkle the taco seasoning over the turkey mixture, followed by the black beans and corn. Mix well and allow to cook for an additional 2-3 minutes, until heated through.

          Layer the Filling: Spread a small amount of enchilada sauce on the bottom of the prepared baking dish. Cut each corn tortilla in half and layer half of them over the sauce.

            Assemble: Spoon half of the turkey mixture over the tortillas, followed by half of the remaining enchilada sauce. Add half of the shredded cheeses on top. Repeat the layers with the remaining tortillas, turkey mixture, enchilada sauce, and finish with the remaining cheeses.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Serve: Remove from the oven and let it cool for a few minutes. Top with sour cream, chopped cilantro, and sliced jalapeños if desired.
