Ingredients

2 pounds baby potatoes, halved or quartered (depending on size)

1 large onion, thinly sliced

2 cups beef or vegetable broth

1 packet French onion soup mix

2 cups shredded cheddar cheese (or a cheese blend of your choice)

1/2 cup sour cream

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Onions: In a skillet over medium heat, add olive oil. Once hot, add the sliced onions. Cook for about 10-15 minutes, stirring occasionally until they become soft and caramelized. This step enhances the flavor but can be skipped if you’re short on time.

Mix Broth: In a large bowl, combine the beef or vegetable broth with the packet of French onion soup mix. Stir until dissolved.

Layer the Ingredients: In the crockpot, add the halved or quartered baby potatoes. Sprinkle with garlic powder, dried thyme, salt, and pepper. Pour the French onion broth mixture over the potatoes, followed by the caramelized onions. Make sure they’re well distributed.

Cooking Time: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The potatoes should be tender and flavorful.

Add Cheese and Sour Cream: Once potatoes are cooked, stir in the sour cream. Then, sprinkle the shredded cheddar cheese on top, cover, and let it cook for an additional 15-20 minutes until the cheese has melted and is bubbly.

Garnish and Serve: Carefully stir the potatoes to combine the melted cheese throughout. Garnish with chopped fresh parsley and serve warm.
