Ingredients
  

2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

½ cup cream cheese, softened

1 tablespoon taco seasoning

1 small bell pepper, diced (any color)

½ cup corn (fresh or canned)

2 green onions, sliced

4 large flour tortillas

1 tablespoon olive oil

Salsa, for serving

Sour cream, for serving

Instructions
 

In a large mixing bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, cream cheese, and taco seasoning. Stir until well mixed.

    Add the diced bell pepper, corn, and sliced green onions to the mixture. Toss gently to combine all ingredients evenly.

      Lay a tortilla flat on a clean surface. Place about 1 cup of the chicken and cheese mixture in the center of the tortilla.

        Fold in the sides of the tortilla, then roll it up tightly from the bottom to secure the filling. Repeat with the remaining tortillas and filling.

          Heat olive oil in a large skillet over medium heat. Once hot, add the wrapped tortillas, seam side down. Cook for about 3-4 minutes per side, or until golden brown and crispy.

            Remove from the skillet and let them rest for a minute before slicing in half.

              Serve warm with salsa and sour cream on the side for dipping.
