Cheesy Broccoli Rice Casserole

2 cups uncooked brown rice

4 cups vegetable broth

4 cups fresh broccoli florets (or frozen, thawed)

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or homemade)

1 cup milk (or plant-based milk)

1/2 cup onion, diced

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon nutmeg

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (for sautéing)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Rice: In a medium pot, bring the vegetable broth to a boil. Add the uncooked brown rice, reduce heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and the liquid is absorbed.

      Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Prepare the Casserole Mixture: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, fresh broccoli florets, cream of mushroom soup, milk, garlic powder, onion powder, nutmeg, salt, and pepper. Mix well until all ingredients are fully incorporated.

          Add Cheese: Gently fold in 3/4 cup of shredded cheddar cheese into the mixture, reserving the remaining 1/4 cup for topping.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish evenly.

              Add Topping: If desired, sprinkle breadcrumbs evenly over the top and then add the reserved cheese.

                Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and the top is golden brown.

                  Cool and Serve: Remove from the oven and let sit for 5-10 minutes before serving for easier slicing.
