2 cups mashed potatoes (preferably leftover)

1 cup cooked broccoli, finely chopped

1 cup shredded cheddar cheese (or cheese of choice)

1/2 cup grated Parmesan cheese

1/4 cup green onions, chopped

1 large egg

1/2 cup all-purpose flour (more for dusting if needed)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 cup breadcrumbs (optional, for extra crunch)

Olive oil or butter, for frying

Prepare the Mixture: In a large mixing bowl, combine the leftover mashed potatoes, chopped broccoli, cheddar cheese, Parmesan cheese, green onions, egg, garlic powder, onion powder, flour, salt, and pepper. Mix until all ingredients are well combined and form a thick batter.

    Form the Cakes: Using your hands, form the potato mixture into patties or cakes (about 1/2 inch thick). If the mixture is too sticky, sprinkle a little more flour on your hands.

      Coat with Breadcrumbs (Optional): If you want extra crunch, gently press each cake into breadcrumbs to coat them lightly on both sides.

        Heat the Pan: In a large skillet, heat olive oil or butter over medium heat. Allow the oil to get hot but not smoking.

          Fry the Cakes: Carefully place the potato cakes in the skillet, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until they are golden brown and crispy. Adjust the heat if they are browning too quickly.

            Drain Excess Oil: Once cooked, transfer the cakes to a paper towel-lined plate to drain any excess oil.
