Ingredients
  

2 cups cooked white or brown rice

3 cups fresh broccoli florets (or frozen, thawed)

2 cups shredded cheddar cheese (divided)

1 cup milk

1 cup sour cream

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or melted butter (for breadcrumb topping)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or a little olive oil.

    Blanch the broccoli: In a pot of boiling water, add the broccoli florets and cook for 2-3 minutes until bright green and slightly tender. Drain and plunge into ice water to stop the cooking process. Drain again and set aside.

      Combine the base mixture: In a large mixing bowl, combine the cooked rice, cream of mushroom soup, milk, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.

        Add the broccoli and cheese: Gently fold the blanched broccoli and 1 ½ cups of shredded cheese into the rice mixture. Ensure everything is evenly distributed.

          Transfer to baking dish: Pour the broccoli and rice mixture into the prepared baking dish, spreading it out evenly.

            Prepare the topping (optional): In a small bowl, mix the breadcrumbs with olive oil or melted butter until the crumbs are well-coated. Sprinkle the breadcrumb mixture over the casserole for a delightful crunch.

              Top with cheese: Sprinkle the remaining ½ cup of shredded cheddar cheese on top of the casserole.
