2 cups cooked white or brown rice

1 cup fresh broccoli florets (or frozen, thawed and drained)

1 cup shredded sharp cheddar cheese (divided)

1 cup cream of mushroom soup (or cream of chicken)

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (optional, for breadcrumbs)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Casserole Mixture: In a large mixing bowl, combine the cooked rice, fresh broccoli, 3/4 cup of the shredded cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are evenly incorporated.

      Transfer to Baking Dish: Grease a 9x13 inch baking dish with non-stick spray or a little olive oil. Pour the rice and broccoli mixture into the prepared baking dish, spreading it evenly.

        Prepare the Topping: In a small bowl, mix the breadcrumbs with olive oil until the crumbs are lightly coated (if using). Sprinkle the breadcrumb mixture evenly over the casserole. This will create a delightful crunchy top.

          Add Remaining Cheese: Top the casserole with the remaining 1/4 cup of shredded cheddar cheese.

            Bake the Casserole: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown on top.
