Cheesy Broccoli and Rice Casserole

2 cups of broccoli florets (fresh or frozen)

1 cup of uncooked white rice (or brown rice)

3 cups of vegetable broth (or chicken broth)

1 cup of shredded sharp cheddar cheese

1 cup of milk (whole, 2%, or plant-based)

1/2 cup of sour cream (or Greek yogurt)

1 teaspoon of garlic powder

1 teaspoon of onion powder

1/2 teaspoon of salt

1/4 teaspoon of black pepper

1/4 teaspoon of paprika

1 cup of breadcrumbs (for topping)

2 tablespoons of melted butter (for topping)

Optional: 1/2 cup of grated Parmesan cheese for extra flavor

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the uncooked rice, lower the heat, cover, and let it simmer until the rice is tender. This will take about 15-20 minutes. Once cooked, fluff with a fork and set aside.

      Cook the Broccoli: While the rice is cooking, blanch the broccoli florets in boiling water for about 2-3 minutes until bright green and tender-crisp. Drain and immediately rinse with cold water to stop the cooking process. Set aside.

        Mix the Casserole Base: In a large mixing bowl, combine the cooked rice, blanched broccoli, milk, sour cream, garlic powder, onion powder, salt, black pepper, and paprika. Mix thoroughly until well incorporated.

          Add Cheese: Fold in the shredded cheddar cheese (and Parmesan cheese if using) into the mixture.

            Assemble the Casserole: Transfer the mixture into a greased 9x13-inch baking dish, spreading evenly.

              Prepare Topping: In a separate small bowl, combine the breadcrumbs with the melted butter. Mix until the crumbs are well-coated.

                Top the Casserole: Sprinkle the breadcrumb mixture evenly over the top of the casserole.

                  Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
