1 lb (450g) chicken breast, diced into bite-sized pieces

1 cup uncooked long-grain white rice

2 cups broccoli florets (fresh or frozen)

1 medium onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 cup shredded cheddar cheese

1 cup milk

1 tsp smoked paprika

½ tsp black pepper

½ tsp salt (or to taste)

2 tbsp olive oil

1 tbsp butter

Optional: chopped parsley for garnish

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, and smoked paprika. Cook for about 5-7 minutes, until the chicken is browned and fully cooked. Remove from the skillet and set aside.

    Sauté Vegetables: In the same skillet, melt the butter. Add the diced onion and cook for about 3-4 minutes, until softened. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

      Add Rice and Broth: Add the uncooked rice to the skillet with the onions and garlic. Stir to coat the rice in the oil and butter. Pour in the chicken broth and bring to a boil.

        Incorporate Broccoli: Once the broth is boiling, reduce the heat to low and stir in the broccoli florets. Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

          Combine Chicken and Cheese: After the rice and broccoli are cooked, return the chicken to the skillet. Stir in the milk and shredded cheddar cheese until well combined and the cheese is melted. Adjust seasoning with additional salt and pepper if needed.
