1 can of refrigerated biscuit dough (8 biscuits)

1 cup shredded sharp Cheddar cheese

1 cup cooked bacon, crumbled (about 8 slices)

4 large eggs

1 tablespoon milk

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh chives, chopped (optional)

Cooking spray or butter (for greasing)

Additional bacon bits for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter to prevent sticking.

    Prepare the Filling: In a medium bowl, whisk together the eggs, milk, salt, black pepper, and chives (if using). In a skillet over medium heat, scramble the egg mixture until just set, about 3-4 minutes. Remove from heat and let cool slightly.

      Prepare Biscuit Dough: Open the can of biscuit dough and separate the biscuits. On a floured surface, flatten each biscuit into a circle about 4 inches in diameter.

        Assemble the Bombs: Place a spoonful of scrambled eggs in the center of each biscuit circle. Top with a generous sprinkle of crumbled bacon and shredded Cheddar cheese.

          Seal the Biscuits: Gather the edges of the biscuit circle over the filling and pinch to seal tightly, making sure the filling is enclosed.

            Bake: Place each biscuit bomb seam-side down in the greased muffin tin. Bake in the preheated oven for 12-15 minutes, or until golden brown on the outside.

              Optional Topping: If desired, remove from the oven and sprinkle additional bacon bits and cheese on top. Return to the oven for an additional 2-3 minutes until the cheese is melted and bubbly.
