1 medium zucchini, sliced into thick rounds

1 red bell pepper, cut into 1-inch cubes

1 yellow bell pepper, cut into 1-inch cubes

1 red onion, cut into quarters

8 oz. cherry tomatoes

8 oz. mushrooms, cleaned and stems trimmed

¼ cup olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

½ cup balsamic vinegar

2 tablespoons honey

Fresh basil leaves, for garnish (optional)

Marinate the Veggies: In a large bowl, combine the zucchini, bell peppers, red onion, cherry tomatoes, and mushrooms. Drizzle with olive oil and sprinkle with garlic powder, dried oregano, salt, and pepper. Toss until all veggies are evenly coated. Let marinate for at least 30 minutes.

    Prepare the Balsamic Glaze: In a small saucepan over medium heat, combine balsamic vinegar and honey. Bring to a simmer and reduce heat to low. Let it simmer for about 10-15 minutes, until thickened. Stir occasionally to prevent sticking. Once done, remove from heat and set aside.

      Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated vegetables onto skewers, alternating the types for a colorful presentation. Leave a little space between each item to ensure even cooking.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the vegetables are charred and tender.
