Charred Corn & Black Bean Tacos

Ingredients
  

2 cups fresh corn kernels (or 1 can of drained corn)

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, diced

1 clove garlic, minced

1 tsp cumin

1 tsp chili powder

1 tsp smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Juice of 1 lime

8 small corn tortillas

Fresh cilantro, for garnish

Crumbled feta or cotija cheese (optional)

Avocado slices (optional)

Instructions
 

Prep the Vegetables: In a large bowl, combine the corn, black beans, red bell pepper, red onion, and minced garlic.

    Season the Mixture: Sprinkle in the cumin, chili powder, smoked paprika, salt, and pepper. Drizzle with olive oil and lime juice. Toss everything together until well mixed.

      Char the Corn: Heat a large skillet over medium-high heat. Add the corn mixture to the skillet and spread it out evenly. Allow it to cook without stirring for about 3-4 minutes until it begins to char. Stir and continue cooking for another 3-4 minutes until all the ingredients are heated through and have a nice char.

        Warm the Tortillas: In a separate dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until they are pliable but not crispy.

          Assemble the Tacos: Take a warm tortilla and spoon a generous amount of the charred corn and black bean mixture onto the center. If desired, top with crumbled feta or cotija cheese and avocado slices.

            Garnish: Finish with a sprinkle of fresh cilantro for a burst of flavor.
