2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 cup assorted charcuterie (prosciutto, salami, and/or chorizo)

1 cup baby spinach

1/2 cup cherry tomatoes, halved

1/4 cup sliced black olives

1/2 cup shredded mozzarella cheese

1/4 cup crumbled feta cheese

Fresh basil leaves, for garnish

Instructions
 

Prepare the Chicken: Start by patting the chicken breasts dry and seasoning both sides with salt, pepper, smoked paprika, and garlic powder.

    Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes per side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the baby spinach and cherry tomatoes. Cook for 2-3 minutes, stirring frequently, until the spinach wilts and the tomatoes soften slightly.

        Add Charcuterie and Olives: Mix in the assorted charcuterie and sliced black olives, and let them cook together for another 1-2 minutes, allowing the flavors to meld.

          Combine the Chicken: Slice the cooked chicken breasts and place them back in the skillet. Stir until everything is well combined and heated through.
