1 cup rolled oats

1 cup grated carrots (about 2 medium carrots)

1/2 cup medjool dates, pitted and chopped

1/2 cup almond butter (or peanut butter)

1/4 cup shredded coconut (unsweetened)

1/4 cup chopped walnuts (or pecans)

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp sea salt

1 tsp vanilla extract

1-2 tbsp maple syrup (optional for added sweetness)

Prep the Carrots: Start by peeling and grating the carrots. Set them aside.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, ground cinnamon, nutmeg, and sea salt. Stir well to evenly distribute the spices.

      Blend the Dates and Nut Butter: In a food processor, combine the chopped medjool dates and almond butter. Blend until the mixture is smooth and creamy, scraping down the sides as needed. This will create a sticky base for your energy balls.

        Mix It All Together: Pour the blended date and nut butter mixture into the bowl with the dry ingredients. Add the grated carrots, chopped walnuts, vanilla extract, and maple syrup (if using). Use your hands or a spatula to mix everything together until well combined. The mixture should be damp but hold together when pressed.

          Form the Energy Balls: Take small amounts of the mixture (about 1 tablespoon each) and roll them into balls. Place them on a baking sheet or plate lined with parchment paper.

            Chill: Once all the balls are formed, refrigerate them for at least 30 minutes to firm up.
