Caribbean Chicken and Rice

2 lbs chicken thighs, skinless and boneless

2 cups jasmine rice

1 can (15 oz) coconut milk

2 cups chicken broth

1 onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 tsp fresh thyme or ½ tsp dried thyme

1 tsp allspice

1 tsp paprika

1 tsp cumin

1-2 tsp scotch bonnet pepper, finely chopped (adjust to taste)

Salt and pepper, to taste

2 tbsp vegetable oil

1 lime, juiced

Fresh cilantro, for garnish

Optional: sliced avocado, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs, lime juice, thyme, allspice, paprika, cumin, scotch bonnet pepper, salt, and pepper. Marinate for at least 30 minutes, or overnight in the refrigerator for enhanced flavor.

    Brown the Chicken: Heat vegetable oil in a large pot or skillet over medium-high heat. Add the marinated chicken thighs and brown on all sides (about 4-5 minutes per side). Remove the chicken and set aside.

      Sauté the Vegetables: In the same pot, add the chopped onion and minced garlic. Sauté until translucent (about 3-4 minutes). Add the diced red and green bell peppers and cook for an additional 2-3 minutes until they soften.

        Add the Rice and Liquids: Stir in the jasmine rice, ensuring it coats with the oil and vegetables. Cook for about 1-2 minutes until the rice becomes slightly translucent.

          Combine Everything: Pour in the coconut milk and chicken broth. Mix well and bring the mixture to a simmer.

            Return the Chicken: Place the browned chicken thighs back into the pot, nestling them into the rice mixture.

              Cook the Rice: Cover the pot with a tight-fitting lid and reduce the heat to low. Allow everything to simmer for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.

                Rest and Fluff: Once cooked, turn off the heat and let it sit, covered, for an additional 5-10 minutes. Fluff the rice with a fork and mix the chicken into the rice.
