4 ripe bananas

1/4 cup brown sugar

2 tablespoons unsalted butter

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or vanilla)

1/2 cup granola (your choice)

1/4 teaspoon cinnamon (optional)

Fresh mint leaves for garnish (optional)

Prepare the bananas: Start by peeling the bananas and slicing them into 1/4-inch thick rounds.

    Caramelize the bananas: In a non-stick skillet, melt the unsalted butter over medium heat. Once melted, add the brown sugar, stirring until it's dissolved and bubbly. Add the banana slices to the skillet, cooking for about 2-3 minutes on each side until they are golden brown and caramelized. Drizzle with vanilla extract during the last minute of cooking for added flavor. Remove from heat and let cool slightly.

      Layer the parfait: In serving glasses or bowls, start with a layer of Greek yogurt on the bottom. Add a layer of granola followed by a layer of the caramelized banana slices. Repeat the layers until the glasses are filled, finishing with a layer of caramelized bananas on top.
