3 medium zucchini (spiralized into zoodles)

1 cup cherry tomatoes (halved)

1 cup fresh mozzarella balls (bocconcini, halved)

1 cup fresh basil leaves (torn into small pieces)

2 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and freshly ground black pepper (to taste)

Optional: 1 avocado (diced, for creaminess)

Instructions
 

Spiralize the Zucchini: Use a spiralizer to turn the zucchini into zoodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin ribbons.

    Prepare the Salad Base: In a large mixing bowl, combine the spiralized zoodles, halved cherry tomatoes, and mozzarella balls.

      Add Freshness: Toss in the torn basil leaves. If using avocados, add the diced pieces at this stage for an extra creamy texture.

        Dress the Salad: Drizzle the olive oil and balsamic glaze over the salad. Season with salt and freshly ground black pepper to taste.

          Toss Gently: Using tongs or a large slotted spoon, gently toss all the ingredients together until everything is well coated in the dressing. Be careful not to mush the mozzarella.

            Serve: Transfer the salad to a serving bowl or individual plates. Garnish with an extra drizzle of balsamic glaze, additional basil leaves, or even some pine nuts for crunch if desired.
