Caprese Pasta Salad

Ingredients
  

12 ounces of fusilli pasta (or any pasta of your choice)

2 cups cherry tomatoes, halved

8 ounces fresh mozzarella balls, halved (bocconcini)

1 cup fresh basil leaves, roughly torn

1/4 cup extra virgin olive oil

2 tablespoons balsamic glaze

1 clove garlic, minced

Salt and black pepper, to taste

Optional: 1/4 teaspoon red pepper flakes for a spicy kick

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes and mozzarella balls.

      Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, minced garlic, salt, black pepper, and red pepper flakes (if using) until well emulsified.

        Combine Ingredients: Add the cooled pasta to the bowl with tomatoes and mozzarella. Pour the dressing over the top and gently toss to combine all ingredients.
