8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

3 tablespoons olive oil, divided

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Season the Shrimp: In a bowl, toss the shrimp with Cajun seasoning until well coated.

      Sauté the Vegetables: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened. Add the minced garlic and cherry tomatoes, cooking for an additional 2-3 minutes until the tomatoes start to blister.

        Cook the Shrimp: Push the vegetables to the side of the skillet and add the remaining tablespoon of olive oil. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the skillet from heat and set shrimp aside.

          Make the Sauce: In the same skillet, pour in the chicken broth and bring to a simmer. Add the heavy cream and stir, letting the sauce thicken slightly, about 5 minutes. If the sauce is too thick, mix in some reserved pasta water to reach the desired consistency. Stir in the Parmesan cheese until melted.

            Combine: Add the cooked fettuccine to the sauce, tossing to combine. Fold in the shrimp and squeeze the juice of one lemon over the dish. Season with salt and pepper to taste.
