2 cans (15 oz each) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup buffalo sauce (adjust to taste)

2 tablespoons ranch dressing mix (dry)

Optional: chopped fresh parsley for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towel to dry thoroughly. It's important that they are as dry as possible to achieve a good crunch.

      Season the Chickpeas: In a large bowl, toss the dried chickpeas with the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Make sure they are well coated.

        Add the Heat and Flavor: Pour in the buffalo sauce and ranch dressing mix, then gently toss everything together until the chickpeas are fully coated with the spicy mixture.

          Roast the Chickpeas: Spread the seasoned chickpeas evenly on the prepared baking sheet in a single layer. Bake in the preheated oven for 25-30 minutes, shaking the pan halfway through to ensure even cooking. The chickpeas should be golden brown and crunchy.

            Cool and Serve: Remove the roasted chickpeas from the oven and allow them to cool for a few minutes. For an extra kick, drizzle a little more buffalo sauce on top or sprinkle with additional ranch mix. Garnish with chopped parsley if desired.
