Buffalo Chicken Rice Paper Wraps

Ingredients
  

2 cups cooked chicken, shredded

1/2 cup buffalo sauce (adjust to taste)

1 cup carrots, julienned

1 cup cucumbers, julienned

1 cup red bell peppers, thinly sliced

1/2 cup celery, finely chopped

1/2 cup fresh cilantro, chopped

1/2 cup blue cheese crumbles (optional)

8-10 rice paper wraps

1 avocado, thinly sliced (optional)

Olive oil for brushing (optional)

Fresh lemon or lime wedges for serving

Instructions
 

Prepare the Chicken: In a large mixing bowl, combine the shredded chicken with buffalo sauce. Toss until the chicken is fully coated. Adjust the spice level by adding more sauce if desired.

    Prep the Veggies: Wash and julienne the carrots, cucumbers, and red bell peppers. Finely chop the celery and cilantro, and thinly slice the avocado if using.

      Soak Rice Paper Wraps: Fill a large shallow dish or pie plate with warm water. Dip one rice paper wrap into the water for about 10-15 seconds, or until it softens. Lay it flat on a clean surface.

        Assemble the Wraps: At the bottom third of the rice paper wrap, layer a small amount of the buffalo chicken, followed by the julienned carrots, cucumbers, red bell peppers, chopped celery, cilantro, and avocado slices. Sprinkle a few blue cheese crumbles on top if desired.

          Roll the Wraps: Fold the bottom of the rice paper wrap over the filling tightly, then fold in the sides and continue to roll upwards until the wrap is sealed. Repeat the process with the remaining ingredients.

            Serve: Arrange the wraps on a serving platter. If desired, brush the wraps lightly with olive oil for extra flavor and shine. Serve with fresh lemon or lime wedges on the side for an added zing.
