1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust for spice preference)

½ cup hot sauce (like Frank’s RedHot)

2 tablespoons unsalted butter, melted

Optional: fresh parsley, chopped (for garnish)

Optional: ranch or blue cheese dressing (for dipping)

Instructions
 

Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Batter: In a large mixing bowl, whisk together flour, water, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper until smooth and well-combined. The consistency should be similar to pancake batter.

      Coat Cauliflower: Dip each cauliflower floret into the batter, ensuring they are fully coated. Shake off any excess batter and place the florets on the prepared baking sheet in a single layer.

        Bake Cauliflower: Bake the coated cauliflower in the preheated oven for 20 minutes or until the batter is crispy and lightly golden. Flip the florets halfway through baking for even crispiness.

          Prepare Buffalo Sauce: While the cauliflower is baking, combine the hot sauce and melted butter in a medium bowl. Mix well until fully incorporated.

            Toss Cauliflower: Once the cauliflower is done baking, remove it from the oven and drizzle the buffalo sauce over the florets. Toss gently, ensuring each piece is well-coated in the sauce.

              Bake Again: Return the cauliflower to the oven for an additional 10-15 minutes, until the sauce is sticky and the edges of the florets are crispy.
