Brown Sugar Pineapple Chicken

Ingredients
  

4 boneless, skinless chicken breasts

1 cup fresh pineapple chunks (or canned, drained)

½ cup brown sugar

¼ cup soy sauce

2 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons of cold water (for thickening)

Salt and pepper, to taste

2 tablespoons green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Marinate the Chicken:

    In a large bowl, combine the soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and sesame oil. Mix well until the sugar is dissolved. Add the chicken breasts and ensure they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

      Cook the Chicken:

        Heat a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later) and season lightly with salt and pepper. Add the chicken breasts to the skillet and sear for about 5-6 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Remove the chicken from the skillet and set aside.

          Create the Sauce:

            In the same skillet, add the reserved marinade and bring it to a boil. Once boiling, reduce the heat to medium-low and let it simmer for about 5 minutes. Stir in the cornstarch slurry and continue to cook until the sauce thickens, about 2-3 minutes. Add the pineapple chunks to the sauce and cook for an additional 2 minutes until heated through.

              Combine:

                Return the chicken to the skillet, spoon the sauce over the chicken, and let everything simmer together for another 2-3 minutes, allowing the flavors to meld.

                  Serve:

                    Transfer the chicken to a serving platter, drizzle with any excess sauce, and garnish with chopped green onions and sesame seeds. Serve while hot over a bed of rice or alongside steamed vegetables for a delightful meal.
