4 cups fresh broccoli florets

1 cup cherry tomatoes, halved

½ cup red onion, thinly sliced

½ cup shredded carrots

½ cup sunflower seeds (or pumpkin seeds for a twist)

½ cup dried cranberries (or raisins)

½ cup crumbled feta cheese (or shredded cheddar for a different flavor)

For the dressing:

⅓ cup extra-virgin olive oil

¼ cup apple cider vinegar

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon Dijon mustard

Salt and pepper to taste

Prepare the Broccoli: Start by washing the broccoli florets thoroughly under cold water. Cut the florets into bite-sized pieces if they're too large. You can also peel the broccoli stems and slice them thin; they add great texture!

    Blanching (Optional): To enhance the color and crunchiness of the broccoli, blanch the florets. Bring a pot of water to a boil, add the broccoli and cook for 2 minutes. Quickly transfer them to a bowl of ice water to stop the cooking process, then drain and pat dry.

      Mix the Salad Ingredients: In a large mixing bowl, combine the blanched broccoli florets, cherry tomatoes, red onion slices, shredded carrots, sunflower or pumpkin seeds, dried cranberries, and crumbled feta cheese.

        Make the Dressing: In a separate bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, and a pinch of salt and pepper. Adjust the seasoning to taste.

          Combine: Pour the dressing over the salad mixture and toss gently until everything is well-coated.

            Chill: For best flavor, let the salad sit in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.
