Breakfast Chili and Eggs

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 jalapeño, seeds removed and minced (optional for heat)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

4 large eggs

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Lime wedges (for serving)

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.

    Add Garlic & Peppers: Mix in the minced garlic, diced bell pepper, and jalapeño. Continue sautéing for another 2-3 minutes until vegetables soften.

      Stir in Beans & Tomatoes: Add the black beans and canned diced tomatoes (with their juice) to the skillet. Stir to combine, allowing the flavors to meld.

        Season the Mixture: Sprinkle in the chili powder, cumin, smoked paprika, and season with salt and pepper. Let simmer for about 10 minutes, stirring occasionally until the mixture thickens slightly.

          Cook the Eggs: With the chili mixture simmering, create four small wells in the chili. Crack an egg carefully into each well. Reduce the heat to low, cover the skillet with a lid, and cook for 5-8 minutes, or until the egg whites are set but the yolks remain runny (or cook longer according to your preference).

            Garnish & Serve: Once the eggs are cooked to your liking, remove the skillet from heat. Garnish with fresh cilantro. Serve hot, alongside slices of avocado and lime wedges for an extra zing.
