6 large eggs

1 cup milk (dairy or non-dairy)

1 cup diced bell peppers (assorted colors)

1 cup diced onions

1 cup cooked and crumbled breakfast sausage (or veggie sausage for a vegetarian option)

1 cup black beans (canned, rinsed and drained)

1 cup shredded cheese (cheddar or a cheese blend)

6 large flour tortillas

1 avocado, sliced

1/2 cup salsa

Salt and pepper, to taste

Cooking spray or olive oil

Instructions
 

Prep the Filling: In a large bowl, whisk together the eggs and milk. Season with salt and pepper.

    Cook the Vegetables: In a non-stick skillet over medium heat, add a drizzle of olive oil or cooking spray. Sauté the diced bell peppers and onions until they're soft and fragrant, about 5 minutes.

      Add the Sausage: Stir in the crumbled breakfast sausage and continue cooking for an additional 3-4 minutes until heated through.

        Scramble the Eggs: Pour the egg mixture into the skillet with the vegetables and sausage. Cook, stirring gently, until the eggs are fully set and cooked through, about 5 minutes. Then, fold in the black beans and cheese until the cheese melts.

          Assemble the Burritos: Lay a tortilla flat and scoop the egg mixture onto the center of the tortilla. Add a few slices of avocado and a spoonful of salsa.

            Roll 'Em Up: Fold in the sides of the tortilla and roll it up tightly to form a burrito. Repeat this process until all burritos are assembled.
