Ingredients

For the Bourbon Chocolate Cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

½ cup Bourbon whiskey

For the Blackberry Buttercream:

1 cup unsalted butter, softened

4 cups powdered sugar

¼ cup heavy cream

1 teaspoon vanilla extract

1 cup fresh or frozen blackberries (pureed and strained to remove seeds)

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Prepare the Cake Batter: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In another bowl, combine the eggs, milk, vegetable oil, and vanilla extract. Mix well until fully combined.

Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing on medium speed for about 2 minutes. Carefully stir in the boiling water and bourbon, mixing until the batter is smooth (it will be quite thin).

Bake the Cakes: Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool Down: Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Make the Blackberry Buttercream: In a large mixing bowl, beat the softened butter on medium speed until creamy. Gradually add the powdered sugar and mix until fully incorporated.

Add Cream and Flavor: Pour in the heavy cream, vanilla extract, blackberry puree, and a pinch of salt. Beat the mixture until light and fluffy, about 3-4 minutes. Adjust the consistency with additional powdered sugar or cream if needed.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of blackberry buttercream on top. Top with the second cake layer and apply a crumb coat (a thin layer of frosting) to seal in crumbs.

Frost the Cake: After chilling the cake for about 30 minutes, spread a thicker layer of blackberry buttercream over the entire cake. Use a spatula to create smooth or decorative swirls.

Decorate and Serve: Garnish with fresh blackberries on top and, if desired, a drizzle of bourbon for an extra touch. Slice and enjoy this decadent Bourbon Chocolate Cake with Blackberry Buttercream!
