2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk, at room temperature

3 large eggs

1 tablespoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2 cups fresh strawberries, hulled and diced

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract (for whipped cream)

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This usually takes about 3–5 minutes.

      Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

        In another bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined.

            Fold in the diced strawberries gently with a spatula, ensuring they're evenly distributed throughout the batter.

              Divide the batter evenly between the prepared cake pans and smooth the tops.

                Bake in the preheated oven for 25–30 minutes or until a toothpick inserted into the center comes out clean.

                  Once baked, allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

                    While the cakes are cooling, prepare the whipped cream. In a medium bowl, whip the heavy cream and vanilla extract until soft peaks form. Gradually add the powdered sugar while continuing to whip until stiff peaks form.

                      Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of whipped cream over the top, then place a layer of fresh strawberries on top of the whipped cream.

                        Top with the second cake layer, and cover the entire cake with the remaining whipped cream. Decorate with additional fresh strawberries on top.
