8 oz. linguine or spaghetti

1 lb. large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon (zested and juiced)

½ cup chicken or vegetable broth

½ cup heavy cream

1 cup cherry tomatoes, halved

1 cup baby spinach

Salt and freshly ground black pepper, to taste

¼ cup grated Parmesan cheese, plus extra for serving

Fresh parsley or basil, chopped, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp in a single layer and season with salt and black pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, stirring constantly to avoid burning.

        Add Liquid Ingredients: Pour in the chicken or vegetable broth, followed by the heavy cream, lemon zest, and lemon juice. Stir well and let it simmer for 2-3 minutes until slightly thickened.

          Combine Everything: Add the halved cherry tomatoes and baby spinach to the skillet. Cook for an additional 2-3 minutes until the spinach wilts. Stir in the cooked shrimp, followed by the drained pasta. Toss everything together, adding reserved pasta water as needed to reach desired consistency.
