8 oz spaghetti or fettuccine

2 boneless, skinless chicken breasts (about 1 lb), diced

4 oz pancetta or bacon, diced

2 large eggs

1 cup grated Parmesan cheese

1 cup heavy cream

4 cloves garlic, minced

Salt and freshly ground black pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Extra Parmesan for serving

Freshly cracked black pepper for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Pancetta: In the same skillet, add the diced pancetta (or bacon) and cook until crispy. This should take about 4-5 minutes. Add in the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

        Prepare the Sauce: In a medium bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until well combined. Season with a pinch of salt and freshly cracked black pepper.
