Ingredients
  

2 cups mixed berries (strawberries, blueberries, raspberries)

2 tablespoons chia seeds

2 tablespoons honey or maple syrup (to taste)

1 cup Greek yogurt (plain or flavored)

1 teaspoon vanilla extract

1 granola (for layering)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Berry Chia Jam:

    - In a medium saucepan, combine the mixed berries and honey (or maple syrup). Cook over medium heat, stirring gently until the berries start to break down, about 5-7 minutes.

      - Add the chia seeds to the berry mixture and stir well. Remove from heat and let it cool for at least 15 minutes. The chia seeds will absorb liquid and thicken the jam.

        Prep the Yogurt Layer:

          - In a bowl, combine the Greek yogurt with vanilla extract. Stir well to mix until smooth.

            Assemble the Parfaits:

              - In serving glasses or bowls, start by adding a layer of the yogurt mixture at the bottom.

                - Next, add a generous layer of the berry chia jam.

                  - Sprinkle a layer of granola over the jam for crunch.

                    - Repeat the layers until the glasses are filled, finishing with a layer of berry chia jam on top.

                      Garnish:

                        - Top the parfaits with a few fresh berries and a mint leaf for added freshness and presentation.

                          Serve:
