Ingredients
  

4 medium beets (red or golden, or a mix)

8 oz burrata cheese

2 cups arugula or mixed greens

1/4 cup pistachios, roughly chopped

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Fresh herbs (such as mint or basil), for garnish

Instructions
 

Roast the Beets:

    - Preheat your oven to 400°F (200°C).

      - Wash and trim the beets, leaving about 1 inch of the greens on top. Wrap each beet in aluminum foil and place them on a baking sheet.

        - Roast the beets in the preheated oven for about 45-60 minutes, or until they are tender (a knife should slide in easily).

          Cool and Peel Beets:

            - Remove the beets from the oven and let them cool in the foil for about 15 minutes.

              - Once cool enough to handle, unwrap them and peel the skins off using your hands or a paper towel (they'll slip off easily).

                Slice the Beets:

                  - Once peeled, slice the beets into thin rounds or wedges, depending on your preference.

                    Prepare the Burrata:

                      - While the beets cool, gently open the package of burrata cheese and let it come to room temperature. This allows it to soften and become creamier.

                        Assemble the Salad:

                          - On a large platter or individual serving plates, layer the arugula or mixed greens.

                            - Arrange the sliced beets artistically over the greens.

                              - Tear the burrata into pieces and nestle it among the beets.

                                - Sprinkle the chopped pistachios over the top for crunch.

                                  Dress the Salad:

                                    - Drizzle the olive oil and balsamic glaze over the entire salad. Sprinkle with salt and pepper to taste.
