Beef Bulgogi Bowls

For the Beef Marinade:

1 lb (450 g) thinly sliced beef sirloin or ribeye

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon minced garlic (about 3 cloves)

1 tablespoon minced fresh ginger

1 tablespoon rice vinegar

1 tablespoon gochujang (Korean red pepper paste)

2 green onions, chopped

1 tablespoon sesame seeds

Freshly ground black pepper, to taste

For the Bowls:

2 cups cooked jasmine or sticky rice

1 cup shredded carrots

1 cup sliced bell peppers (any color)

1 cup baby spinach or bok choy

1/4 cup cucumber, thinly sliced

1/4 cup kimchi (optional)

Additional sesame seeds and green onions for garnish

2 eggs (optional, for frying)

Instructions
 

Marinate the Beef: In a large bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, ginger, rice vinegar, gochujang, chopped green onions, sesame seeds, and black pepper. Add the sliced beef and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Beef: Heat a large skillet or wok over high heat. Once hot, add the marinated beef in batches (to avoid overcrowding) and stir-fry for 3-5 minutes until fully cooked and slightly caramelized. Remove from heat and set aside.

      Prepare the Bowls: While the beef is cooking, prepare the rice if not already done. Arrange the cooked rice evenly in the bowls.

        Add Vegetables: On top of the rice, layer the shredded carrots, sliced bell peppers, baby spinach, and cucumber. If using kimchi, add a spoonful to each bowl.

          Cook the Eggs (Optional): In the same skillet, you used for the beef, reduce heat to medium and add a little oil. Crack the eggs into the pan and fry them sunny-side up until the whites are set but the yolk remains runny. Season lightly with salt and pepper.

            Assemble the Bowls: Spoon the cooked bulgogi beef over the arranged vegetables and rice. Top each bowl with a fried egg (if using), additional sesame seeds, and extra chopped green onions for garnish.
